Abstract

“Desserts” have an important place in Turkish food culture. This interest in “desserts” that comes from our traditions and reflects on our daily lives has become an important element in our sayings, songs and other parts of our culture. One of the biggest religious feasts the “Eid” is called as “Sugar Feast” in Turkish culture, which shows that the interest for desserts is very big in our culture. Desserts are brought as gifts or offered in visits with a meaning of “eat sweet, speak sweet”. This study examines the historical past of Turkish delight, its place in palatal delight and its importance and place in Turkish folklore. Turkish delight is one of the indispensable flavors in Turkish food culture. Since the first time it was produced, it held its popularity within the public as a favored dessert and became one of the main offers in special days and celebrations. This also caused the appearance of several different types of Turkish Delight throughout the centuries. Its flavor has become international and it is world known.
